After School Snack: Banana Stacks!

It is always such a joy to share Kristen Feola’s writing on my blog – I can always depend on her for something nourishing, whether it be for the heart or the tummy.  Today it’s the latter!

“Can I have a snack?”

If you’re a parent, you’ve probably fielded this question more times than you can count. I know I have. In fact, it’s usually the first sentence I hear when I pick my kids up from school. Not, “I missed you, Mom,” but, “Do you have something for me to eat?”

I try to serve my family healthy foods. However, there are times when my good intentions get kicked to the curb. I let my daughters have snacks that aren’t super nutritious. I resort to what is convenient.

Ever been there?

One thing that increases my motivation level is to try new snack ideas. Perhaps today’s recipe will give you a similar boost. My girls tested Banana Stacks a couple of weeks ago and gave it a double thumbs up! I guarantee your kids will love making (and eating) these tasty treats!

Banana Stacks

2 large ripe bananas
¼ cup almond butter or all-natural peanut butter

Peel bananas, and cut into ¼ to ½-inch slices (approximately 12 per banana). Spread about 1 teaspoon almond butter on half of the slices. Top with the remaining slices.

Yield: 4 servings (serving size: about 4 stacks)

Recipe Notes

  • Add a layer of Date Honey to each stack.
  • Sprinkle each stack with cinnamon.
  • Add chopped dates or raisins to tops of stacks.
  • Put in freezer until firm (3-4 hours) for a cool treat!
