Last-Minute Huevos Rancheros (Gluten-Free!)

Last Minute Huevos Rancheros - Gluten Free!Foodie Friday on Instead of the Dishes?!  Yes, my friends, old dogs can learn new tricks.  Earlier this week I had one of those days where I got home later than expected, everyone was tired and hungry, and I had forgotten to defrost and marinate the chicken for the recipe on the meal plan.  So, I scoured the fridge/freezer/pantry for inspiration, and here is the result! (serves 4)

Ingredients

1 14.5oz can of black beans, drained and rinsed
2C frozen corn kernels (or fresh)
1C frozen chopped green pepper (or fresh)
2tsp Crazy Jane salt or other “fun” seasoning
2T Olive Oil
8 6-inch corn tortillas
8 eggs
2 C shredded cheddar cheese

Optional, To-Taste Ingredients

Salt
Pepper
Cilantro (fresh or dried)
Guacamole (pre-made, or might I recommend Brittany’s Favorite Guacamole recipe?)
Salsa
Sour Cream
Jalapeno Jelly

(Please pardon the photo – I didn’t think to take a picture until I had already started eating, so this food is not “styled”!)

1. In a Medium sauce pot, combine black beans, corn, and green pepper.  Season with Crazy Jane salt or whatever your favorite combo seasoning is, and heat on medium-low heat.

2. Meanwhile, heat 1T of Olive Oil in a skillet (add more oil as you go).  Cook each tortilla until is is lightly browned and the surface bubbles up.  Place cooked tortillas in a warming oven or covered in the microwave.

3. Cook eggs in the same skillet that you used for the tortillas, adding more oil if needed.  Cook 3-4 minutes, or longer if you want harder yolks. Season eggs with salt and pepper while cooking if you like. I also like to flip my eggs and cook them for just another minute or two to harden up the whites a bit.

4. Plate the dish by starting with a tortilla (one per egg).  Spoon the black bean mixture onto the tortilla and sprinkle with a layer of cheddar cheese.  Add the egg, and then another layer of cheddar cheese. Sprinkle with cilantro if you like.  Top with other toppings as desired!

My whole family loved this dish.  It was fast, different, and gluten free!
